I only see

generateRejectingLanguageModelFromArray

method, which indicates this is not possible and that the only way to have Rejecto
work is via generateRejectingLanguageModelFromArray. Is that correct?

Rejecto is a plugin that modifies LanguageModelGenerator so it can only be used with an ARPA lm generated by LanguageModelGenerator.
